                      Cottage Cheese Pancakes

  •                                      Ingredients:
    • 1 cup cottage cheese
    • 2 eggs
    • 1/2 cup flour
    • 1 tbsp sugar
    • 1 tsp vanilla extract
    • 1/4 tsp salt
    • Butter for frying
  •                                                                                         Instructions:
    1. In a bowl, whisk together cottage cheese, eggs, flour, sugar, vanilla extract, and salt until combined.
    2. Heat a skillet over medium heat and melt some butter.
    3. Drop spoonfuls of the batter onto the skillet and cook until golden on both sides, about 2-3 minutes per side.
    4. Serve with honey, syrup, or fresh fruit.
